I committed to not eat out at all this week and to be gluten and diary free as well. I have been holding myself to my promise since Saturday. Today I made a gluten-free hummus pizza and it was …..OH SO GOOD! I did not however make the crust from scratch- Udi’s provided the gluten-free crust. I did however make the hummus, which I used as the sauce. I added spinach, kalamata olives, artichoke hearts and basil as the toppings. It was divine that I ate the whole thing. I so appreciate the simple meals that are easy to throw together and taste amazing.
