Day 118 of Gratefulness: Vegetables


Since I have been on a plant based diet my appreciation and love for vegetables has grown tremendously.  It has been interesting to eat out through this process as so much of the prepared foods are filled with meats, dairy, and sugar.  I was at Whole Foods looking for frozen sweet potato fries thinking they would just be sweet potatoes cut up but they had sugar in them.  Aren’t sweet potatoes already sweet?  And salad dressings are filled with sugar as well, it is very disappointing to say the least but on the a good note I can just make my own yummy dressings and sauces that taste so much better.

The taste of vegetables and I am talking about the really clean, non-GMO vegetables is just unbelievable.   There is so much flavor to them and they provided so much for you.  I am really learning to cook more and appreciate the value of plants.  Plus they make me full fast.  I am really excited to the changes my body is going through already on a plant based diet.  My body is a little on the tired side as I begin this process only because I am changing my eat habits on an extreme level and my body is detoxifying all the toxins I ate for years, which will take it toll on a person.  I have noticed though that mentally and emotionally I am on top of the world.  There is less anxiety and more happiness, there is less stress and more joy and there is less fear and more love.  I am excited about these changes and my heart is opening up so much more due to vegetables and all plant based food.
